# Expert Advice:

01 -
  • Takes only 20 minutes but tastes like you've been cooking all day.
  • Raw fish and crisp vegetables mean every bite is textured and alive.
  • The marinade is so good you'll find yourself making extra just to drizzle on rice later.
02 -
  • Never skimp on fish quality—the whole dish rises or falls with it, so buy from someone who cares.
  • Marinate the fish after it's cut and right before assembly; longer than 30 minutes and the texture starts to change.
  • Have all your vegetables prepped and ready before you touch the fish so assembly is quick and nothing gets warm.
03 -
  • Buy pre-cut sushi rice from the market if you don't want to cook it; saves time and one pot.
  • Toast your own sesame seeds if you can; the kitchen smell alone is worth it, and the flavor difference is real.
