# Expert Advice:

01 -
  • It comes together in the time it takes to boil water, with no stove required and almost no cleanup.
  • Every bite feels fresh and alive, like youre eating something that actually nourishes you instead of weighing you down.
  • You can make it your own by tossing in whatever vegetables or toppings you have on hand without following a strict formula.
02 -
  • Rinse your canned beans and corn thoroughly, or youll taste that tinny, salty liquid in every bite.
  • Dice the avocado at the very end, even a few minutes of sitting in the acid will start to turn it mushy and gray.
  • If you make the base ahead, keep the avocado and dressing separate until youre ready to eat.
03 -
  • Taste your lime before juicing, some are sweeter than others, and you might need to adjust the honey to balance it out.
  • Toasting the pumpkin seeds in a dry skillet for two minutes makes them even crunchier and brings out a deeper, nuttier flavor.
  • If your avocado isnt quite ripe, leave it on the counter in a paper bag overnight, itll soften up by morning.
